As a Vegetarian I get tired of the limited selection of pre- prepared vegetarian options normally available, yet as a chef I don't always want to have to cook for myself when I get home from work. This dish was like a breath of fresh air, and brought back memories of my round the world trip last year. Can we have more like this please?!
