Italian Chicken
We start this dish with a nice plump breast of chicken and pan fry it. Then we make the sauce in the same pan so as to incorporate all the flavours the chicken has left behind. To make the sauce, we get some diced onions, tomatoes and some good quality marinated black olives. All this combined with a good red wine makes a very nice, rich tomato sauce. We then top the chicken with mozzarella cheese so that when you bake it, it oozes down the sides of the chicken and browns off nicely. Mmmmm yum.
